従来のペーパーフィルターは、その繊維素材によって湯の流れに一定の抵抗がかかり、抽出レートや湯とコーヒーとの接触時間を規定してきました。

FLATは抽出効率とフレーバーの透明感を高めるために開発された、フラットボトム型のペーパーによる抽出抵抗を極限まで排除した特殊素材を採用した高性能なフィルターです。

SIBARISTが独自に設計した非プリーツ型（フリュートなし）のフラットボトムフィルターで、滑らかで妨げのない表面を形成し、コーヒーベッド全体に均一にお湯が届く、理想的な抽出空間を生み出すようになっている画期的な構造です。
この構造によってお湯がコーヒーの粉を通らずに抜けてしまう現象を排除し、コーヒーの粒子の抽出効率を最大化するとともに、プリーツ部分に粉が残る現象も防ぐことができる設計となっています。
